I love this recipe! It had taken out the "scary" side of this whole process. My Mom used to make her own jams, jellies & preserves which she learned as a brand new U.S.A.F. Officer's wife while she & my Dad were stationed very close to the Arctic Circle in Canada in the early 1950's. As it stays dark up there for 6 months out of the year, her lovely Canadian lady friends taught her to can as well as putting up jams, jellies & preserves. She used to always try to teach me but I was never interested. Now that she is gone, I wish I had paid attention...famous last words! She used to prepare Grapefruit jelly which my (using "Ruby Reds") from their native state Texas. Since my Dad has just been diagnosed as a diabetic, that delicacy (if you can find it!) is strictly verboten. This video shows a technique for sugar-free jam, which is wonderful given our current National obesity/diabetes crisis! Thank you so much for posting this video!
